Simple Vegetarian Lasagna

Chop, Layer & Bake=Simple Vegetarian Lasagna

Ingredients (compliments of Trader Joe’s):

2 yellow squash

2 zucchini squash

3 carrots

1 yellow bell pepper

4 mushrooms

1 package of lasagna noodles

16 oz whole milk ricotta cheese

16 oz fat free cottage cheese

about half of 1 can of tomato basil marinara sauce

shredded mozzarella cheese (sprinkled as desired)

1 tbsp of olive oil

**we totally forgot to add spinach, but it would be a very nutrient dense & tasty addition to the lasagna layers 🙂

1) Preheat oven to 400F.  In the meantime chop all the vegetables:

2) Lay out the rest of the ingredients for building lasagna:

3) Mix Ricotta, cottage and mozzarella cheese…

4) Coat the bottom of the backing pan with olive oil and tomato basil marinara sauce and start layer with lasagna noodles:

5) Layer lasagna noodles with chopped vegetables–yellow and zucchini squash, carrot, pepper, mushroom, onion and mixture of ricotta and cottage cheese:

6) Finish the last layer with lasagna noodles, sauce and sprinkle mozarella cheese:

7) Bake for 45 minutes at 400F and serve!

This simple vegetarian lasagna is one of the staples in our home.  It gives a delicious meat-free option to let our bodies rest from digesting animal meat protein.  Because of all the cheese it is also rich in calcium.  Eating nutrient dense food and rotating meat and meatless dishes are important for maintaining overall health.
