End of the summer is here and my garden has abundance of tomatoes, squash and red hot peppers. What to do with this goodness? Well, I have made simple sautés, salsas and soups. As I have experimented with different recipes my goal was to make these dishes tasty in a simplest and least processed of all possible variations. Here is the recipe for a very simple but delicious tomato soup.
You will need:
3-4 large tomatoes
1 medium white onion
1 cup of chicken broth
1 tablespoon of organic butter
3-4 garlic cloves
1 tablespoon of olive oil
1 tablespoons of cheese per bowl
parsley or cilantro for garnish
2 small red hot peppers (optional)
Heat up olive oil in the pot on low to medium heat. Add cut up onions and lightly sauté them. Add diced tomatoes and chicken broth. Cook all on the low heat about 20-25 minutes until soft and boiling. Turn off the heat. Add butter, minced garlic and stir.
**Putting this mixture through food processor is optional if you want a creamy consistency. Garnish with cheese and parsley as you pour in each individual bowl.
